Creamed Spinach

Serves 3-4


16 Frozen Spinach pellets (approximately 3-4 per person) (Available at BMF Factory shop Noordheuwel)
1 medium onion (alternatively use spring onions)
1-2 cloves of garlic (to taste preference)
Pinch of pepper
1 -2 tsp Salt (to taste preference)
250ml cream (full fat gives a better flavour)
50-80g butter (alternatively use olive oil)
1-2 tbsp white flour


Melt butter in pan on medium heat.
Chop onions/spring onions and place into pan with melted butter.
Cook until translucent (transparent), add garlic halfway through.
Add flour to make a smooth paste and cook for 30 seconds.
Switch off heat to pan.
In a separate pan, add the Frozen Spinach pellets with 1 tablespoon water.
Stir slowly on medium-high heat until melted and heated through.
Add salt and pepper seasoning.
Drain off any excess water and add to onion pan.
Stir combined mixture through and add cream. Alternatively use a smooth cottage cheese or sour cream for a tangy flavour.
Heat gently on low heat, stirring continuously. Do not boil.
If you find any excess water or you want a thicker mixture, you can add a little Maizena to thicken.  
Place into a serving container. Add an extra dollop of cream or a knob of butter in centre.
